Lords of Middleton is proud to welcom MACDUFF Beef to our product range.
They source top quality cattle from a small selection of trusted farms in
the Scottish Lowlands and Borders, supplying tender, succulent and
ready-to-cook beef and lamb.
They only buy cattle that have been grass fed. This natural diet is
supplemented with root crops and grass silage. With MACDUFF Beef you get
beef prepared like it was in days gone past which melts in the mouth.

Sirloin Steak With Croutons, Creamy
Stilton and Mushrooms
Ingredients
- 2 Lean Sirloin fillet steaks
- 12.5g ( half an ounce )of
Butter
- 1 x 15ml sp (1tblsp) Olive Oil
- 1 x 15ml sp (1tblsp) Olive Oil for the
steak
- 3 cloves garlic, crushed
- 1 slice of bread, crust removed & cut
into Quarters
- 2 Flat mushrooms cut into thick slices
- 3 x 15ml sp fresh flat leaf Parsley,
chopped
- 3 x 15ml sp crème frâiche
- 50g (2oz) Blue Stilton Cheese wedge ,
halved
- Salt and Black pepper

Method |
- Heat the butter, oil and one of the
crushed garlic cloves in a frying pan. Add the bread quarters and
cook for 1-2 minutes each side until they resemble croutons.
- Remove from the pan with any cooked
garlic pieces.
- Spoon the extra olive oil for the steak
into the pan and heat.
- Add the remaining garlic, mushrooms and
steak and cook as chart below
- Meanwhile, in a small bowl, mix together
the parsley and crème frâiche. Season.
- Top the beef steak with the garlic
mushrooms, stilton wedge and garlic croutons.
- Drizzle with the crème frâiche and
parsley. Serve with asparagus or mange tout and new potatoes -
delicious.

Steak Piri Piri
Ingredients |
- 2 Lean Beef Frying steaks
- 2 x 15ml sp (2 tblsp) olive oil
- 2 x 15ml sp (2 tblsp) chilli sauce
- 2 sprigs of fresh thyme
- Half a lemon cut into wedges
|
Method |
- In a shallow dish mix together the olive
oil, chilli sauce and the thyme
- Dip the steaks into the mixture and
ensure that they are coated on both sides
- Place the steaks under a preheated grill
and cook according to the chart below
- Brush steaks with remaining chilli oil
occasionally
- To serve, squeeze over lemon juice and
serve with sauté baby potatoes and a guacamole salad.
